Salted caramels

Adding salt flakes to these simple caramels turns them into a taste sensation in your mouth. Making your own caramels is not a daunting process. Just be patient and make sure the syrup mixture reaches the right temperature before taking it off the heat.
1½ cups sugar
1½ cups heavy cream
¼ cup light corn syrup
2 tsp sea salt flakes
1 Grease a 9in x 9in (20cm x 20cm) baking dish. Line the bottom and sides with parchment paper, extending the parchment 2in (5cm) over the sides.
2 Stir the sugar, heavy cream, and corn syrup in a medium saucepan over medium heat until the sugar dissolves. Bring to a boil. Boil until the mixture reaches 248°F (120°C) on a candy thermometer (firm-ball stage). As soon as it reaches this temperature, remove the pan from the heat. Sprinkle in 1 teaspoon of the salt flakes; do not stir.
3 Pour the caramel into the lined baking dish. Sprinkle with the remaining salt. Let cool.
4 Use a warm, sharp oiled knife to cut the caramel into squares. Wrap in waxed paper or serve in little paper cases.
